Ingredients

2 - 3 lbs pork bone

peeled daikon (cut into

4 cloves garlic

2 knobs ginger

½ half an onion

2 tbsp dried shrimp, soaked in water

2 tbsp sugar

2 ½ tbsp fish sauce

2 tsp mushroom seasoning

2 tsp chicken bouillon

splash of soy sauce

green scallions to garnish

white and black pepper to garnish at the end

Directions

Step 1

Clean and rinse bones. The key to a clear and clean broth is cleaning your bones

Step 2

Boil some salted water and parboil for 10 mins. DO NOT put the lid on the pot, it will over boil

Step 3

Use the downtime while its parboiling to prepare the aromatics and soak your dried shrimp.

Step 4

Once you’ve finish parboiling, drain the water and clean the bones. You’ll see some dark scum coming from the bones, just run water over it and it’ll rinse off! Clean the pot too

Step 5

In some clean fresh water, add back your bones and all of the aromatics + shrimp

Step 6

Boil for 2-4 hrs and remove the scum that floats to the top.

Step 7

Season to taste and enjoy!
